I have a 1080p hd tv with a 1080p dvd surround will i get the tv sound through my hdmi cable to the dvd?

You want to only use the TV for the picture, and send the sound (via whichever TV audio output jack format you have on both the TV and surround system capable of multichannel audio (i.e optical, digital coaxial or HDMI) to an input on the surround sound system (which I'm interpreting as a combo DVD player/amp (or receiver) with surround speakers). If you don't have one of the three formats listed on BOTH the TV and surround system you won't get surround sound. Note that for your purposes all three will give virtually identical results. Use whichever cable you have, and note that you DON'T need an expensive HDMI cable if you decide to go that way ... any cable (although ideally a Category 2 rated HDMI 1.3 version. See link for a good source) will work fine.
Note that many TV broadcasts these days are in 5.1 sound, so if set up right, your surround system will be giving real surround, not an illusion (at least for these programs).
